BAKED ONION RINGS

I modified these from a Weight Watchers cookbook. They are delicious and crispy crunchy good.




Approximately 3/4 cup of all purpose flour with 1/2 tsp of paprika and 1 Tbsp of cayenne pepper. More or less to taste. Mix well.




Slice a whole onion, I used Vidalia but to your preference, into thick rings. Do not separate yet.




Take three eggs. I prefer the vegetarian eggs, but your preference will also work. You don't have to separate the white from the yolks, but it will work as well either way.




Bread crumbs! I use generic Italian style.




Beat the eggs.




Separate two rings, then coat in the flour mixture. Shake off excess.




Coat with the eggs.




Cover completely with bread crumbs.




Lay them on an ungreased baking tray. When tray is full, place into a preheated 400 degree oven, on the center rack if possible. After 10 minutes, flip the rings to toast evenly.




Viola! Tasty baked onion rings! A delicious and healthful side.
